Sweet Potato Toast

We’ve always been told to never skip breakfast because it is the most important meal of the day breakfast gives us energy to take the day on and thus we must choose our breakfast wisely. Sounds ambitious no? Waking up is a task in itself, who has time to actually make breakfast.
 

This is a healthy, quick breakfast or snack that is made up of only natural, whole ingredients and can pack in lots of colourful nutrition in a small package. When we’re short on time we can often end up eating packaged cereals, pre-made granola bars or just a slice of bread- processed and often full of added sugar and not necessarily . We’ve been there too, adulting and its struggles, and so we bring to you this easy gluten free vegan toast that will not take you more than five minutes to make.

All this recipe needs is sweet potatoes. Yes you read it right, that’s how easy this recipe is. Sweet potatoes are high in fibre, potassium and manganese which helps brain function, and even though they’re naturally sweet, they won’t spike your blood sugar level, because their high fibre content making them slow at burning starch, in turn keeping our energy levels high. What better way to start the day?

What to do:

  1. Cut the sweet potato length ways into thin slices and pop the slices in the toaster on a medium setting for 5-6 minutes—until they are mostly cooked through. This normally takes 2 rounds of toasting! When it pops up- check it is no longer hard by poking with a knife- if it is, just put the toaster on again.

  2. Your toast is ready! Top with avocado smash for an energy fuelling breakfast that will chase away those morning blues, or with pea smash for a protein filled snack which will keep you fuller for longer or top with some natural almond butter and out jamun jam for a sweet sour slice of toast that will taste like a dessert and load you up with energy and nutrients.
