Baked Sweet Potato Chips
Ingredients
2 sweet potato cut into 2 cm rounds
1/2 tablespoon extra virgin olive oil
1/2 teaspoon cinnamon powder
1 teaspoon each salt and pepper
Serves
1-2
What to do:
Preheat oven to 180C
Place the sweet potato on a baking tray
Drizzle with extra virgin olive oil, salt and pepper and cinnamon.
Toss the sweet potato in the oil salt and pepper until each piece is evenly coated
Bake for 30 minutes, turn over half-way through.
Remove from oven. Let them cool.
To serve, top with pea smash and cherry tomatoes for a protein-packed snack that will keep you full and energetic or use to scoop up a dip like cowpea hummus.
