Mediterranean vegetable tray bake
Whether you’re cooking for a number of people or its just you, tray bakes are your answer. They’re simple, hassle free and are great for weekend meal preps to tide you over the week.
All you need is a baking tray, an oven, your favourite ingredients and you’re on your way to a delicious and wholesome meal.
Besides being fuss free, tray bakes are a great way to preserve the nutrients in your food and retain the flavour from all the ingredients. All those lovely cooking juices caramelising within the pan stay within the tray- and when we stir the grain in at the end it absorbs up all that flavour.
We at Copper and Cloves love our veggies and are always looking for different ways to cook them without them going mushy and losing their flavour - and tray-bakes are the answer!
This recipe is so simple, with just 7 ingredients which you can pop in the oven- while you put your feet up! Check out the video below and we’ve written it all out for you too- so no excuses!
200 gms cherry tomatoes
3 red onions
2 red capsicum
1 cup cooked barley (or another grain like quinoa, millet or brown rice- cook in salted boiling water untiljust cooked, but still with a bite)
4 cloves garlic
Salt and pepper
1 tbsp olive oil
1 handful herbs- a mix of mint basil and oregano or thyme and rosemary will work
20 gms brahmi leaves
What to do
Preheat your oven to 180C
Cut the onions and capsicum into slices and throw them in a tray along with the cherry tomatoes , drizzle with olive oil, sprinkle salt and pepper
Cover the tray with foil, and pop in the oven for 20 minutes at 180C.
Take the foil off and cook for another 20 minutes, until the veggies start to caramelise
Take the tray out, add in the barley and herbs into the same tray so that they can soak all the delicious flavour from the veggies, stir it well!
Season to taste, and throw over the fresh bramhi leaves on top. Done! Your veggie tray bake is ready.
This is such a simple, delicious recipe, an easy way of including vegetables in your diet and is a one tray meal- by adding in the grain you’ve got a complete meal. This is perfect to pack to take to work, as the flavours will continue to develop and merge together.
